Side steps - Wife wants, I don't ,but I probably won't win this one - Are the OEM tubes the best or is there an better alternative?
Spotties - probably wont bother at first
Dual batteries and Anderson plug - Easy, I'll contact drivesafe
Long range tank - whats available here?
Suspension upgrade - do I need anything above standard for towing a camper trailer?
I'd take the EBC and UHF from the Disco
Am I correct in assuming the Radio/CD will take an iPod/USB connection?

NO. The Aus spec has the iPod aux. connector blanked off. You should get an aftermarket unit with direct iPod control and I would also recommend a speaker upgrade with perhaps a compact sub-woofer.
Moving house, prophylactic advice; sounds like you've already got that plan in the works.
