A bit of an issue that although doesn't effect the driving is starting to get a little annoying.
It seems everytime I change my gears (especially from 2-3 or 3-4), when I engage the clutch to change the gear, there's a very brief knocking sound. It is not very pronounced but enough to be noticable.
I only had the car serviced some 1500km ago.
It's a 2000 TD5 110 extreme.
Any thoughts? Quick fix? Worth worrying about??

A possibility, perhaps related to the service, is that this sort of thing can be caused by the handbrake dragging slightly, so that as soon as you declutch, the slack in the transmission is reversed, and then reversed again when you take up the drive. Check (carefully) the temperature of the hand brake drum after a run.

Do you get the same noise when you back off the accelerator, or when you start speeding up from cruising (another words applying the power)?
Yeah I do get it when backing off the accelerator but definietly not as loud.
It's seems to be more pronounced when I've put a few revs into it and mainly when changing from second to third.
It isn't a loud knock - more like a dull thud. I suppose I could wait until my next service to get it checked out but that's some 7000k away!

Your further description suggests something loose in the suspension. The most likely thing is the ball joint on top of the rear axle or the bushes at the front of the A-frame. It could be bushes at either end of the rear lower links or the front radius arms, but any play in these places usually shows up first in steering problems rather than thuds.
Again, a dragging handbrake can exacerbate the symptoms.

The spline in the prop shaft on the rear or the UJ,s
The bearing in the noise of the diff.
The end of axle flanges
Half shafts
Bushes on the rear radius arm on the chassis side and axle in , This will cause the whole axle to twist on accelation and and twist back on run down. If the chassis ones are gone you will feel like the car has rear wheel steering
Could also be the front axel on the same things and front prop. If there is one thing i have founf with land rovers is noise travels very well under the car and can be difficult to home in to where a noise is really coming from
But most of these will cause a one knock noise on change of gear and not really alot of Knocking
But as said i would look at the hand brake as this can be more of a pain than usefull. Mud is the hand brakes down fall. The accuator will give up and get clogged up very quickly and easyly . This will cause the hand brake shoes to slightly stay on and catch the ege of the drum and make the noise. But them this would make the noise all the time and not just when you change gear .
