5 hours at 40 then 1.5 at 65 degrees. Its out in the sun now finishing off for a few days
For a few years now, I have been doing Beef, Venison and 'Roo jerky, involving a twenty-four hour marination in 'Steves Special Chilli Paste'!
My local butcher and I are looking at my having a crack at 'Crocodile Jerky'. Being a white meat, I'm not too sure how it will go.
Any advice?
p.s. During the week, I made some Chilli and Cherry Guava, Sweet Jam, using all home produce. Very tasty, I may say!
