    Love a bit of Jerky or biltong

    I do. Some fresh roo back straps in marinade now. Some Venison hanging up for Bilton and Jerky and more next week

    Love biltong, mate took me to some awesome biltong shops in South Africa when I was there.

    roo time.jpg This roo back strap is sweet. Dark soy and extra chiil, pepper, cayenne pepper and schezwan pepper

    5 hours at 40 then 1.5 at 65 degrees. Its out in the sun now finishing off for a few days

    For a few years now, I have been doing Beef, Venison and 'Roo jerky, involving a twenty-four hour marination in 'Steves Special Chilli Paste'!

    My local butcher and I are looking at my having a crack at 'Crocodile Jerky'. Being a white meat, I'm not too sure how it will go.

    Any advice?

    p.s. During the week, I made some Chilli and Cherry Guava, Sweet Jam, using all home produce. Very tasty, I may say!
