Ive got a recipe from an old blackfella i knew when i was a kid living at Blackall QLD,alot of you mite know this one but anyway here goes ,(this was done with roo or beef but i guess any red meat would work),hang it in shade till its green dont worry bout the maggots,traditionaly it is rinced in a moving streem of water,substitute is cup of viniger,tablespoon of salt covered with water left overnight,fry next day garentied the most tenter meat you have ever had sorry for the spelling lol
