simple barbequed chili scallops, shaved fennel and orange salad w/ lemon mascapone dr
ok guys
im going to start a new thread and i will like to see everyone fav recipes heres one of mine

hunt down yourself some good fresh sea scallops on the half shell
# a good bulb of fennel, as fresh as possible
# spanish onion
# a nice plump orange
# mascapone cheese
# ground dried chili (you can get this from a good asian deli)
# fresh lemon juice
# a little olive oil
simply thinly slice your fennel, spanish onion and orange, and set aside separately.
take about 2tbs of the mascapone and loosen it up with your lemon juice a little olive oil, set aside.
place all your salad ingredients together and toss gently.
get your barbeque on the go let it heat, sprinkle a little olive oil on the grill if it smokes straight away its ready to cook your scallops, dip you scallops into a little olive oil and then into the ground chili and place on the barbeque, only cook the scallops on each side for about 1minute and remove ( you can cook them longer if you like them well done but they will only toughen the more you cook them )
place your scallops bake into your shells pile a little of your salad on each, give you mascapone a tweak w/ some sea salt and drizzle over the salad and scallops finish with a few sprigs of the fennel tops and a drizzle of olive oil and
tuck in

geez mate, you wanna do the cookin at my place? much better than the current cook can manage
