One knob is the thermostat for 240 volt only.
One knob is the flame intensity control for the LP gas only.
The LPG knob should also have a position marked for best lighting with the press button.
12 volt is unregulated.
I have an old Finch 3 way that manages to hold about 5 degrees in my kitchen keeping the beers cold. I tumble it about once a month to keep it going.
I have never had the handbook and am unsure of two of the controls. These are the controls
The bottom one is the igniter for the gas, the middle one is the themostat control and I have no idea what the top one is for.
Also I assume turning the thermostat knob clockwise makes it colder even though the position marked on the backing card bears no resemblance to the actual position of the thermostat. Does the thermostat actually work on 12v and 240v or just gas?
I have no idea what the top knob does.
Also if I was to attach a 12v fan to it to assist in operation does it go at the top of the fridge flue or at the bottom.
Thanks
Garry

My finch lasted for 15 years, but I never had to tumble it over and gas is the go with these fridges as 240 volt performance is not really good and 12 volt with the thing pulling 15 amps is a waste of time.
My 12 volt compressor chinese Mobikool leaves it for dead for cooling gunt

I appreciate using gas in a normal car is not the smartest decision - but you said your 3 way had issues on gas in the back of the 101. What was it? Blowing out the flame?

My 3 way finch never had issues in the back of the 101 or any other vehicle.
I just decided to up grade to a compressor type fridge.
I use to run it on gas while driving the car with no issues.
Parking on angles and operating it was not a issuse either
Been running on 240v for a while now - temp ranges between 4 and 13 and seems to settle around 10. The themostat control does not seem to have much impact. I have the temp sensor about half way down (is this the right place?) Temp on the bottom is always much lower.
As my 9kg gas bottle is getting low I thought I would try gas to run it out. Mid level temp has settled at 5 but right at the bottom is just above freezing. Again the thermostat control or the gas control does not seem to have any impact.
Interestingly because of the different temperatures at different levels I put a small electric fan inside and the temp went straight up to 13 and stayed there - as soon as I removed the fan the temp started to drop - so I am not sure what is going on there.
As I think my old 3 way is history, I am tempted to buy a Chinese fridge (damos) for about $600 but for about $300 more I can get a slightly smaller Aussie Evercool. 70L EVAKOOL FRIDGEMATE PORTABLE CAMPING FRIDGE FREEZER - eBay Portable Fridges, Food Storage, Camping, Hiking, Sport. They seem to have a good write up and seem reasonable cheap when compared with Engel. Any one got one? If so does it work well?
