If I do end up working on the Rangey in the shed, should I go for a different motor than the 3.5? Or should I pull that one out and play with it? I'm just thinking it would be easier to plug everything in where it was before it got taken out....

The standard 3.5 will get you anywhere you want with less chance of breakage. Go for the biggest motor when you have upgraded all the rest of the driveline to take it...
The RRC is lighter, more capable and more nimble than a Nissan. Nissans are HEAVY.

89 Rangie vs 88 Patrol
As everyone has stated you have a great platform to start with.
Its taken years for Nissan and Toyota to catch up with coil suspension and disc brakes and they still don't ride as well.
As far as standard articulation goes there's nothing better than a landrover for that and they get better with modification.
Also the sound from a V8 Rangie is a joy to behold ........
So start modifying what you have and enjoy the ride and style that only a Range Rover classic can give
