You can just multi select the people you want and press the call button. calls all of them.
I haven't done a large conference call for a while but in my experience 3 is fine. I think the max is 5. If you are trying for 5 make sure the person hosting it has a really good connection - both up and down.

Yep, that's my experience.
Video will some times detract from audio quality, but it is easy to drop the video if wanted.

last time I tried a three way call only allowed audio and file transfers concurrently, but one to one calls allowed video too
Actually you might be right about Video, I just realised I've only done that two way with two others on voice.

The video definitely hammers the audio quality unless everyone has good connections.
It took me a long time to get through to the senior guys at work that the video (that they absolutely needed so they could see Harry bleary-eyed sitting in his jocks at 4am in some hotel on the other side of the globe ) was actually stopping them from being able to hear what the other person is saying.
They still insist on leaving the video on by default, but have learned to turn it off if its causing voice quality issues.
