Since putting in Madman EMS I keep an eye on everything as well.
Normal operating is the same as yours, gentle normal around town varies from 75-85. Under load can hit 100 easily. 4WD'ing up LONG STEEP hills (ie, high revs and slow) it hit 110, then I was stopping to let it cool a bit.
Funny thing is, the factory temp gauge gets to where it normally sits quickly (65-70degrees), and doesn't even move right up to 110 degrees!!!! And before I did my rad flush and new coolant, I did a hard drive towing bikes, hot and hilly, and I was letting temp gauge get to the top of the "normal" range before letting it cool down a bit. I would hate to think how hot it was getting then, I didn't have madman in at that stage......
Although I think my thermostat is fine its on my list of things to change, god knows when it was done last.

). All of my coolant was dropped on the road in a hurry. The temp got to 114 as I pulled over. The car's had no ill effects whatsoever from that little episode.
