Looking at the front of my disco, with the light and bull bar, there really isn't good flow for air to the radiator so i'm wondering if i should change it somehow.
Between the grill and the radiator is the condenser, looks kinda like a thin raditor, has very fine fins which over time can clog easily, cutting air flow to the radiator
I usually give it a hit with a can of degreaser just to loosen any crap and then clean it with my small pressure washer, it's just right , not to powerful.
Best to remove the radiator to do this although i just unbolted the raditor with the hoses still on and was able to make a gap between the radiator and condenser, did this to save my new coolant, otherwise i would of just removed it.
Also this was on a petrol RRC, but most vehicles with aircon have a condenser in front of the radiator,
Check your viscous fan also as suggested!

When this happens on a Defender it's usually the fan's viscous clutch not pulling in properly, as a few others have already mentioned.
On a Defender the air flow through the engine bay is crap at speed, so relies on the fan to force air out of the underbonnet area and pull air through the radiator, ram air alone won't cut it.
