I had a thermostat stick shut last year and blew a head gasket. I reco'd the heads and the radiator was rodded at the radiator place. Since then the thermo fans run more often than not around town, but not on the open road. I tried a 75 thermostat but it made no difference so I put the 82 back in. I am stumped with this as the viscous fan seems to work fine.

I found many years ago that cars that heat up on the highway sometimes have a head gasket leak into the valley.
This has no involvement of the cooling system, but another symptom of this is oil leaks from the valley seals etc.
Really if the thermostat is OK and the radiator clean, then this would be the next place to look.
