a mite high for my liking but within the theoretical limits of the system if everything was perfect.
Id be thinking about why is it so hot at 105-110ish, worrying and gearing down from 110-120ish and looking for a place to take immediate cooldown/shutdown action at over 120.
the td5 handles the heat a little better than the V8 IME but the v8 is generally cheaper to fix after its cooked itself.

Our Discovery II V8 runs around 90℃ when driven.
However, when the car is stationary, the temperature goes up to about 105℃.
The electric fan cuts in at the right temperature.

do you mean that your driving along at 90 deg then when you stop and let it idle the temp goes up and then after about 5 minutes it starts to creep back down?

You are correct. However, the temperature doesn't come down after 5 minutes of idling time.
After replacing the thermostat, the maximum idling temperature now is 100.5℃. The fan cuts in at 98℃.

Interesting that I have a tm2 gauge on mine that measures the temp of the metal the sensor is attached to, at the moment it is hanging in mid-air as I haven’t re attached it after fitting the coils. The gauge rises dramatically[over 100] when the engine is left idling seems to say there is very little air flow when the vehicle is not moving, I can't stop the fan with a piece of garden hose so the fan clutch is okay

My 3.9 V8 RRC with 300tdi viscous fan and 88C thermostat runs at around 90-92C on a 28C day and idles at 94-94.5C
I have not yet checked while towing.
