Thanks for all the help so far - so I think I'm going to get the Koni shocks, just need to sort springs now.

However, the whole point of this is to fit 235/85/16 tyres so am I best keeping the standard alloys or getting some +25mm offset steel rims [I assume that this will make the track 64mm wider - (57mm standard offset - 25mm) * 2] - is the benefit of the extra offset that the car is slightly wider and reduces the centre of gravity? And if this is the best route to persue will I need extended wheel archies or will the fit under the standards?

Jake, if you are only using 235's then keep the standard alloys. They are a very good wheel and are a lot lighter than steel so less unsprung weight. You can get them cheap too.

I think most go for the greater offset so they can fit wider tyres. I did it to fit 285's.

You will not get any rubbing with 235's on standard rims.

It's not just the wider tyres that you need the offset for, it's the larger diameter tyres too.
When you go to a taller tyre, on turns the front tyres will turn in closer to the vehicle and likely rub on the trailing arms - often resulting in a reduced turning circle. By spacing them out, through offset rims, you will prevent this.

Yes, but that is because when many people go larger in diameter they also go wider.
I have had 235/85-16 on standard rims and the do NOT rub.

Many people run 265/75-16 on standard rims and there is only a very slight rub. I think a very minor adjustment to steering bump stops for outweighs the extra cost and weight of steel rims.

Just ordering my Koni shocks from paddocks and was wondering if you extended your bump stops too or if the Koni have enough travel to cope without them?

I did extend the rear bumpstops by 30mm. The Koni's will cope but because you are putting a 50mm spacer under the airbags, the airbags compress more and there is the possibility of damaging them.

Thanks. Did you leave the front as standard or extend too?

You should also consider the front cross member as well because some shocks depending on the "drop" they have will allow the front prop to contact the crossmember.

My Terrafirma shocks allow my OME front springs to just come of the seats and the prop to hit the crossmember, hence it's spaced down 15mm, there is always a trade off when modding something.

Also, if fitting spacers under the rear airbags, It's advisable to fit +2" longer bumpstops to stop the bag being potentially damaged when the axle is fully stuffed up into the arch.
