I have 285/75/16 with only a 2 inch lift and they scrub if I hit something too hard, next mod 2 inch body lift
I have yokohama geolanders and they have no road noise, just amazing.

They are only all terrain instead of mud terrain but I have been amazed where they have taken me, probably part due to the size. These tyres would not fit the standard rim though, rims are only about $130 max each.

Speedo is 10 kms out and mine is a v8 but I believe you would still get these going in your td5. Front drive shaft is your only worry unless you go bigger than a 2 inch lift, and the front drive shaft unis are not too exy

have fun in the cape, take spares of what ever tyre you end up with, and fan belt and winch and and and and
