Loving being able to tinker away at a Land Rover again. Can't wipe this smile from my dial!

Travel safely.

Nanocom - Definitely, it is the kind of thing you wish you brought when you don't and are glad you did when you do.
Trans temp Sensor- Not worth it, especially not in your scenario.
Inspect:
Front Prop shaft this is a must do especially before your trip. (Vital if it has a suspension lift) I used to carry a spare until I got a Les Richmond one.
Transfer Case for leaks and backlash.
Check the duckbill on the air box, it is behind the inner guard on the passenger side front wheel. Don't suck in dust! TD5's hate it.
Intercooler hoses look good on the outside but can delaminate on the inside, often replace with silicon hoses.
Repair plastic - I've got no idea.

I recently went on a 6 week trek to Cape York with my partner in our D2a TD5. It was awesome, remove the 2/3 rear seat and there is heaps of room for stuff. Also we used a roof top tent that folded out behind the car. The rear door had a fold out table on it so it worked out to be a kitchen that is under cover (when the tent is out) and sheltered by the large rear door. If you plan on doing an off road adventure like this, fit a snorkel not only for water crossings (needed on the telegraph track) but it is also good to get the intake away from the dust as much as possible.
