Only due to my experiences, I much prefer the coolant measuring method.
Once I installed mine, I took a few measurements around the engine with an IR temp gun.
The most inconsistent part of the engine as I recall was the head temps.
Some points(most actually) correlated pretty much perfectly with the coolant temp gauge, thermostat housing did too.
But there were some 'hot spots' on the head that read close to 10°C higher than all the other readings(radiator, water pump, thermostat housing etc).
I think most of those hotter spots were at corners or near corners .. don't remember any possible threaded recesses included in that list of hot spots.
I do remember tho, that those hotter spots didn't increase in temp at the same rate as the rest of the system.
That is, I generally get a running temp of high 70's low 80's, and most of the metal parts (that matter ) when measured with the IR gun confirm that operating temp.
But on a few occasions(a while back now), I've had 95°C or more, and stopped to take IR gun readings too.
Only problem is, once I open bonnet, that 95 or higher temp falls quite quickly .. but I've seen 90's consistently across the various metal parts, but those hotter spots didn't show readings of about 10°C higher than they normally do.
