My gut feel is that 75mm bolts with no washers should be just fine.
But then my head is also conscious that you don't screw around with brakes. So I think I'll take 1mm or so off the bottom of 80mm bolts and that way it has more thread engagement than the original setup rather than less.

    My take on this…

Go buy some 12.7 Button heads and be done with it LOF Clutches Front EXTREMEspec Big Brake Kit 330mm

I'd love to but have been unable to find anywhere that can/will supply.
The local bolt specialist advises only hex head available in M14 x 1.5 fine. If they were M14 x 2.0 course it'd be a different story.
If you can advise me of a supplier I'll be all over them...

EDIT: found these M14 x 1.50p Metric Fine Plain Black Grade 12.9 Socket (12mm Key) Head Cap Screws DIN 912 online < M14 x 1.50p Metric Fine Plain Black Grade 12.9 Socket (12mm Key) Head Cap Screws DIN 912 >. But their dimensions are likely no better:

The head height at 14mm sticks up 4.5mm further than the hex head bolts.
The head diameter at 21mm only reduces the diameter by 5mm overall.
So it's possibly trading a gap in one area for a potential issue caused by the other.

For a rear setup check out #71 and #74
Its an economic way to reuse your current front brake setup after being removed to fit the Brembos.
