For your intended use I would recommend an ATR type tyre, rather than a mud tyre.
Get a set of four at the same time if possible.
I am having a great run out of some Pirelli Scorpion ATRs in 245/70 16 size (LT construction) at the moment. They are fitted to a RRC that is doing about 1000km of highway driving per month. They are 11 months old and show no apreciable wear. They also do some dirt road, rocky track and beach work.
I would also recommend BFG All Terrains, I have had a good run out of them in the past. In fact they are what I was going to buy when I got the Pirellis, but I couldn't source any at the time.
