I would also go Coopers ATR's but make sure they are the LT type.
Keep correct tyre pressures for any given road and you will have a ball.
I also suggest you find say 2 spares, even if not new.
If you have 18inch wheels, many places in the outback only stock standards (15-16).
My coopers have been brilliant, with care these will do 100k km's.
My friends also have them and Yes the ST's did chip but he is a Patrol driver and too lazy to deflate tyres.

Thanks to everyone who's replied, all good advice. I'm leaning towards A/T's, they seem to be longer lasting when used a lot on bitumen/gravel, and less noisy. I'll check out all the tyres mentioned... my father has a set of BFG a/t's on his ute and they've been great- not noisy at all either. Pirelli's look very interesting. Cheers
I have recommended the MTR's which I think are a perfect touring tyre and are what I usually run when touring.
For road use I also use the Pirelli ATR and that is an excellent tyre also.
