    Cooked correctly fish and chips are one of the lowest fat content fast foods. With oil at the correct temperature and clean the fish / potato etc are cooked by heat transfer to the food not by the fat penetrating the food. Gives a crispy coating with no oil in the fish itself.

    Trouble is most shops cannot be bothered keeping the oil at the correct temperature and clean. Too easy to just heat it up and use the oil for a week or so before changing it. Customers become used to greasy fish and chips and regulars come to believe this is how it should be.

    A few customers saying their equipment did not work correctly when it actually was just lazy operators. At least they cared about the product sold for the majority the equipment was working just fine so long as the fat was melted when the equipment was turned on.

    Used to work for a catering equipment supply business. Some times you learn too much useless information.

    Like pies and sausage rolls that are worth eating cultural staples of potato scallops and dim sims are unheard of in this part of the world.

    Worked for a food wholesaler in Australia which sold 'caters pack nuggets' which were made from tripe no chicken in them at all hence the name. Also 'caters pack rings' which were rings of tripe not the camaleri the customer saw thought they saw. You would be surprised at some of the customers for these products.

    Well it could be like here were we have 3 pizza shops and up until recently they all closed on Tuesday nights, instead of staggering it.
