Some of my 2.5yr old daughters favorites are -
    Playtime with Dora Explorer
    Dora
ABC Art maker and ABC Iview for kids shows(ABC is an Aussie TV channel and these may not be available over there but great and free apps)
Nick Jnr Draw and Play HD
    Doodle Buddy
Talking Gremlin HD (like talking tom)
Wee sing and learn ABC(really good learning one)
    Nighty Night(great for bed time)
The cat in the hat apps theres a few
    Racing Penguin
Shark Fingers 3d(not really kid friendly but she likes it for some reason)
    ABC Alphabet Phonics
Classic Nursery Rhymes lite featuring humpty dumpty
Laser Lights(my 1yr old likes this)
color dots(another fav for my 1yr old)

She also loves to get on youtube, which we hate her doing as she can find anything on there so we have loaded MXtube which is a youtube cache program where you select the videos you want and they download to the ipad and are stored locally, so basically she cant access anything other then the selected videos and they are also available without an internet connection. MXtube is a jailbreak app though i think but there are similar apps in the apps store if you havnt jailbroken.

Then theres Airvideo which is also my favourite, it allows you to install a media server on your PC and access it from the IOS device to stream video, it can even bet setup to stream across the internet if you open ports in your firewall and have a static ip or Dynamic DNS name setup for your internet connection. This app is awesome when your on the road, i use my torrent machine at home to download what even i want to watch and then stream to the ipad.

I would love to be able to do this but it's way to complicated for my technically challenged mind...
