    I researched this topic for weeks a few years ago. My key criteria was it must last a lifetime I was sick of buying pans and believed surely the human race has solved this problem. Now non stick wasn't what I required I have a seasoned blue metal pan with a welded handle that serves that purpose, it cost $50 delivered from memory. What I wanted was a set of pans and pots that would see me though this planet and would live on through the next generation we are raising. What better heirloom than something your relatives can use daily to raise their families? Something that's useful but also reminds them of you while also providing at the same time.

    Maybe during my research I got a little too obsessed, after all it's just a piece of metal with a handle. To me though you cook with the heart and that shows through your food. So anyone serious about good cookware check out Mauviel, got to be the 2.5mm copper though.

    No one pot will do all. Do you need even distribution? Rapid heat control? High heat retention.
    You choose your pot/pan depending on the product you are cooking.

    Copper or aluminium thin wall for sauces. Heavy base when simmering is required. Heavy cast for steak, casseroles and oven dishes. etc,etc

    IMO if you need a non-stick pan. YOU CAN'T COOK.

    I use the original non stick cast iron only way to go

    Gotta admit though, when Muvva went into the nursing home, I rediscovered the dark blue enamelled cast iron frypans that I fondly remembered as a child, the ones she replaced with the non stick aluminium one, that burnt everything regardless, and shed Teflon into every meal. They're miiine now, I can fry (burn) stuff meself with them. I guess her wrist didn't like the weight.

    Cast iron 4 eva!
