+1 for the Coxs river. Lovely spot.
Theres a farm at the end of Manchester Rd called Bindera that charges a very small amount to camp by the Barrington River, and another called "the steps" on the same road. Both popular with canoe clubs.
Chichester State Forest has some good spots just out of Dungog.

Most of the camping in the warmer months on Long Weekends will be crowded, especially north.
Chichester State Forest, could be crowded though
Barrington Tops has a few that once you're camped there knowone else can camp there, you just gotta get there early.
Colo River is not bad
