Ireland, England and Scotland all fly theirs upside down if they are in distress..

I'll add liver to that list. My Dad, being a good old fashioned Yorkshire man could - and would - eat anything and everything an animal was born with or killed with...

He had an offal cookbook...

Could be interesting sometimes but some of it rubbed off - I like pickled ox tongue and brawn (boil an entire pigs head down for a few hours, throw away the skull, pour the broth into plastic containers and refrigerate. Once set, turn out of containers and slice and enjoy like sandwich meat)

Yep I love liver as well. Fried in bacon fat and served in a gravy made with the fat and liver juices. Crumbed brains fried in bacon fat are the yummiest of all tucker.
