As far as i know only the empty or full of the adblue is measured by the car or tuck.
Does not confirm or test liquid put in.
Given that a very high percentage is water and that it does go in to engine what would happen if for example you could not get adblue & you just filled container with water??
Probably illegal but better than not having car because you cant get adblue!!!
As far as I know, if the additive is out of spec, the engine performance is limited.

If you run out of adblue performance is definitely limited, in some cases car wont even run, however this is more about detecting levels in storage container i.e. like it tells you when wiper washer reservoir is low.
But given the adblue combines with exhaust gas to bind diesel exhaust gas particles not sure the car would know unless it is analysing exhaust on way out.

That’s not what it does or how it works. It’s feedstock into a selective catalytic process to reduce oxides of nitrogen. Nothing to do with particulate emission, that’s what the DPF is for.
The catalytic process is pretty tightly controlled and monitored, so a missing feed element is going to cause significant changes in the process parameters (catalyst temperature for example) which are dead easy to spot.
