Most likely the CG artist, perhaps due to an overbearing Art Director, shows incredible restraint.

From that Wookieepedia page, History section:
An internal superconductor was introduced which transferred the returning looped energy from the negative-charged flux aperture back into an internal power cell. With this modification, the power cell would only expend power when the energy loop was broken (when the lightsaber blade cut into something)

and with the beam being a figure eight it can be circulating infinately. So is the double ended sabre sort of like a proton accelerator?

    Ah I think I have it !

It doesn't stop, it's an Arch shaped laser with a start and end but very close together and elongated so it looks like one beam.

    Plausible?

I have this tiny laser pointer and I recently discovered the beam can bend. I pointed it at the trailing edge of the perspex rain screen on the Disco, which is curved, and the beam curved...

when it terminated it hit the door mirror; the beam blasted across the road and zapped the neighbours cat, which is now in orbit...

I daresay they've developed some way of mimicking gravity and curving the space at the end of the beam back onto itself.

Of course, the energy levels required would be phenomenal, so they must have also developed a power source capable of such a task.

Unless of course, the entire sabre is simply a quantum event and the beam comes into existence out of nothing and ceases to exist a metre later. After all, we can really only know of the probability of it's existence and not it's actual existence.
Either that or it's generating some kind of quantum wormhole at the of the lightsabre and there's a universe out there that is all infinite (minus the first metre and a half) lightsabre beams banging away at each other.

    Cheers
