Wow.. what an open ended question...
Where they are grown. (temperate climate generally has lower caffeine to tropical)
Every roaster is different.
Every grind is different
Every machine is different.
Coffee is like golf. Occasionally poor, sometimes average, mostly good, but very occasionally awesome. And it's these coffees that keep you coming back to have another go.

As already posted.

Arabica (Coffea arabica) refers to the species of coffee bean, there is also Coffea canephora (or robusta) which is the other commercial bean. If it says 100% Arabic it just means its made from 100% Arabic it still doesn't imply it isn't blended from different roastings etc etc.

Are you buying coffee from the supermarket or from a place that roasts it?

Do you buy pre-ground or have a grinder?

Do you have a large kitchen and a fat wallet?

taste even depends on who makes the coffee too
