Fridge dimensions vary widely between models and brands.
Once you have your limits measured a bit of searching on Google should show you what will fit.
Has anyone built a fridge box that enables one of the rear seats to stay up? I'm wondering what the width of the box is and the maximum size fridge is that will fit?

Interstate for the next week and wanted to get the jump on it whilst I was away.
I put a cage / slide in which fits my Waeco CFX-65 (CFX-50 has same footprint but is not as tall) and you can still put the seat up. It is pretty tight. Any bigger footprint wouldn't fit I think.

Perhaps a bit of padding to protect your family member could be clipped on.
Good point Tombie. I like the clip on idea.
I've never actually used that seat with the cage there as usually if the fridge is in then we're loaded up for a trip anyway and need the loadspace. I mainly made it that width to access the spare wheel winder (I've since permanently attached a socket to the winding loop)

That's perfect thanks Dave. I will build the box up to clear the narrower section at the front. I can use that cavity as storage for my solar panels. I can safely fit in a 500mm wide fridge and 825 deep will fit almost any fridge. I will most likely go the 90 litre primus mammoth fridge. It has seperate controllable fridge and freezer sections. My waeco cf80 I had to modify to push air using a computer fan from the freezer section to the fridge section to stabilise temps.
The Primus is a fantastic unit and far more battery friendly than a CF80..
We're seeing less than 1/2 the power consumption with freezer at -5c and fridge at 2c
(Yes we have a CF80DZ, a CF50, the Primus and an Engel 40)
But my primes hinges along the long side so it's too wide to have it so you can access from rear
