Sounds like an awesome trip.
We're a family of 5 with 3 daughters (13,11,9)
I've had 20" rims on my tug when purchased so purchased a set of 18" Tuffant steelies with BFG tyres. I swap the rims out for each trip. The Tuffant and BFG combo is awesome and hasn't let me us down. I just drop to 15psi in the sand and its pretty unstoppable. However, if you are not doing any serious 4wding I suggest you may get away with the 19" Wranglers - however I have no experience with these so can't comment.
Roof tray - I added a Rhino pioneer 3/4 length platform and this has been awesome. A little bit more wind noise but nothing too major. I also fitted an Eezi Awn K9 Ladder and this has been excellent. I would highly recommend this ladder if you add a platform.
Side awning. We've got a Ironman awing and its been great for beach days etc. We only use it once or twice a year but still recommend it.
Rear fridge. We use the 3rd row seats and have no slide but have an 60L Evakool in the rear and its a great setup.
Underbody - haven't got to this yet.
Dual battery - yep, have a dual battery under the hood with Traxide setup. Works well and runs the fridge etc. Portable blanket solar panels work well with this. I've gone away from fixed solar panels due to weight.
UHF - yep, but not used much
Bullbar - haven't got one and wouldn't bother. Each to their own. I prefer the clean look of the Disco sans bullbar.
If you need a service in Perth along the way I recommend Darren at Aztec 4x4 in Rivervale WA. Just give him plenty of notice first.
