I've found a 3 door that only has the front row seats and states 'seating capacity 3'. Not sure how hard it would be to add an extra seat as per option back at the time and if it will need engineering etc. I'm in Vic if that helps.
Cheers and thanks in advance.

It would need 'engineering' to change the seating capacity.
If you used standard parts to add the seats, seatbelts etc. it should make it easier but someone has to sign it off.
Years ago I purchased a s/h Defender and the dealer added rear inward facing seats. When I got the paperwork from VicRoads it still stated 5 seats. Had to go back to the dealer (got a story about how VicRoads must have lost the paperwork) they had to get it signed off then back to VicRoads and it's now registered as a 9 seater.
