Re latch mounting bracket my feeling is that you would be able to force the pin square with a piece of pipe or such, this would distort the bracket but would be unnoticeable.
There is a fair bit of adjustment in the locking plate to radiator support panel but pin needs to be square.
Looking at some of my bonnets LR had a few options for mounting locking pin
Attachment 150384 Attachment 150385 Attachment 150386 this one could be an option if your not happy with the bracket
