Try to remove it using an angle grinder with wire brush. But go easy on the aluminium. Would be best to remove the skin and start again from scratch - but that is a lot of work.
Looking down into the channel around the roof of my project SIII LWB, I see that the gloop (sealer) has cracked and fallen out in some places along the rivet line.
1. What is the recommended product to reseal this? (Bear in mind I want to paint over it. I need the paint to adhere and I know some types of silicones are a problem.)
2. Is it worth removing all the old crud, and if so, what's the best method to do that?

Which one? There's a wide range of Sikaflex products.
definitely sikaflex, cant remember the breed, but theres a polyurethane adhesive/sealant that sika claims is intended for automotive use
Sikaflex 221 Techniqueis made for this sort of application but there are other options as well. You can use butyl mastic sold by selleys which will always stay pliable. If you really want to make it waterproof, pull the hood lining out and seal it from the inside as well.

Sikaflex is the go, but you have to drill out all the 20,000 rivets first then completely remove the old whatever sealant and rivet it all back.
The biggest problem is finding the correct mushroom headed rivets, so you usually hae to buy longer ones and shorten them. An involved process where you drill them down to the correct length then cut off the excess.
