As long as your car is roadworthy there shouldn't be any probs with Rego. If it was previously registered with the 186 in it then it is probably still recorded in the system somewhere. Where are you? If you have the means to go back to original, do it. The Landy engine doesn't stress the drivetrain as much and are a dime a dozen.
You can galvanise the firewall, It is steel. The problem is that thin plate (footwells) does not like being hot-dipped and will ripple. If you can handle having ripply footwells then its no problem. Make sure you get it done somewhere reputable though - there are some horror stories about firewalls warping during the hot dip galvanising process due to poor procedure.
A gal chassis will last forever, and doesn't have warping problems like the firewall. The cost is dependant on how long you want it to last. Forever? Gal it.
