As far as your seat belts go, try to track down someone that has an Ex NZ Army series 3 V8 that they have fitted with a hard top. The V8's had roll over protection that incorperated seatbelt mounts and mounting points for the hoopset etc and it matches the hood profile.
You might also try Tim at Bramble Downs Landrover, Taupaki, West Auckland 09 810 9894 at one point he had quite a stock of hood part for series Landies, Tims also the Quartermaster for the Auckland Land Rover Owners Club so he may be able to put you onto someone there who can help
