It might be worth going to an Upholsterer if only minor tweaks are needed - i.e. softer foam or changed shape.
Likewise, if you have a cargo barrier, I have seen people who have had rear head rests made which work well.

I have a 110 extreme 2002. Personally i find the drivers seat very comfy (on long distances more comfy than the discoII) its a wierd position but i have adapted well.. i am 6'1" and heavily built and the only issue i have is elbow room.. my legs are pretty short so i dont need mud rails!
However strangly Rachael is 5' and about the same weight as my left leg she finds it very very uncomfortable, so would like to replace the seats to something more like the discos comfort wise..
what are the options here in oz for getting seats.. i would like high backed ones ideally. seems to be plenty of options over the water and north a bit.. but i would imagine shipping would hurt.
Also along those lines, the second row seating is poor and i would like high backs in there too.. plus a little lower if i could... any options there?

I assume she is sitting int he passenger seat?
The big difference with the passenger seat is that there is bugger all leg room because of the air conditioning. (this was actually a deal breaker for me, and the reason I have an '86 County 110).
Before you invest big money on seats, install some seat rails:
