I cant recall exactly what the defender/county one is like, but if you can get a cold chisel on the side of the bolt head you can usually undo the bolts by tapping around with a hammer and chisel.

Hey all,
Does anyone know how to remove the ignition barrel/lock of a defender/county?
I have a feeling im going to have to drill the bolts out.
Can anyone shed some light on this.

I just used easy-outs straight into the bolt head recess. The bolts came out easy, just like they say on the packNo drilling or hammering and no damage.
When I replaced my ignition/steering lock I drilled mine out. Couldn't get a cold chisel to do the trick.

yeh I think ill give the easy outs a try. I think the bolts they use are called shear bolts

Removing the barrel is quite simple, using a center punch on the outer edge of the screw, turning it anticlockwise. Once they move a bit they become finger tight.
Replace them with cap head screws.
