What sort of EFI was it you put on, Flapper or 14Cux ? I know with the 14Cux you have to have a resistor in the loom that idetifies the fuel map to use. If it was 14Cux I have a guide by Mark Adams (Efi Guru) I can email to you.

The cam should not make any difference (as far as I am aware). All the Efi does is supply fuel to the engine. PM me your email and I'll send over the stuff from Mark which is a 14Cux diagnostic guide. It may be one of the sensors is not set up correct or not working (e.g. TPS).

Cam will make a huge difference. EFI is set to run within certain parameters, a different cam profile will change those parameters.
