Disco 300tdi got hot this morning, maybe twenty minutes at 90k's an hour when I smelt the heat. Stopped straight away but she was pretty damn hot.
Can only imagine that the thermostat is knackered as it was driven for a couple of hundred k's the day before and it was fine.
How do I tell if I've done the head?

the best way is to strip it down and have it measured and tested.
the normal way is to fault find the cooling system, replace/bodge the damaged part to functional and then test the cooling system.
Start by pulling the glow plugs and barring the engine over by hand for 2 turns of the crank then wind it on the starter with the IP fuel solenoid wire pulled off.
if you dont get water out of the glow plugs you're off to a good start.
