the problem seems to come from the outside air temp sensor's input, as it's behind the front grill make sure you didnt disturb it's wiring when you worked with the bullbar and if you dont see anything wrong maybe it would be good to replace the sensor cos imo you can't rule it out other way... that sensor's input is used by the ECU in conjunction with the in car temp sensor to manage the system so it's the first suspect and as long as you are not certain it's good the diagnose is hard... it's not expensive, google out JTF100160
you can run a diagnostic sequence just to make sure but unfortunately it covers only clear open/short circuit situations while the sensor can fail other way too and supply erratic signal
