But wait! There's More!
So with the cooler weather the knock has changed (finally) which may or may not help with diagnosis.
When I do a cold start there is no knock for the first three or four seconds.
And then there it is like a metallic ping. Once The D'Fer is up to operating temperature it is still there, but just part of the background hum.
Do I start all over again? Or does this ring any bells out there?

My Deefer has the same or at least a very similar knock to the one you describe. Start her up and as soon as she has settled into an idle a knock starts up that then quietens down as she warms up. It's still there but only barely when warm.
It's not bearings, it's more of a diesel knock and it's not there when first fired up it actually becomes apparent after the oil light has gone out.
Interestingly, I took the Deefer down to a local diesel specialist because I wanted the FIP timed. They tweaked the pump a smidge but didn't check the timing like I asked
(what is it with people you pay to work on your car?) but the guy that worked on it mentioned that there was a slight 'noise' coming from cylinder 1.
When I quizzed them they said it's nothing to worry about, it's not unusual with 300TDis and they have a customer who has done hundreds of thousands of kms with this noise being apparent in their 300TDi. They couldn't tell me what causes it though.
So I've decided that the knock I hear each morning is the noise they are talking about and I've decided to ignore it. Fair to say I was ignoring it anyway
