A couple of years ago I replaced my handbrake cable. Now the action has become gritty, and feels like the cable is dry and needs lube. The workshop manual doesn't mention lubing the able as far as I can see. Any advice?

The cable does not need lubrication. My guess is that at least one strand is broken, and I would be looking at replacing it ASAP. Possibly the lever pivot and ratchet, or the expander in the brake unit, are rusty or gummed up with mud, but my money would be on a failing inner cable.
