I'm a fender man, so don't know hom much of this helps, but I run big offset so I can run decent sized (height and width) tyres without rubbing the control arms under lock. (35X10.5X16 for playing, 33X12.5X15 daily drivers)
Plenty of people will tell you that it increases the stresses on the axles etc, and that is a consideration. I'll see how I go in the long run (I have maxi axles, so should help a bit)
A dude on overlander has big offset 10" wide rangie rims...at a price.
I ran stock offset rims (sunraysia style) reversed, for a while, to work out how much offset i would need. Looked a bit 'ag', but did the trick.
PM me for more info if needed.

also widens the track of the vehicle - handles soooo much better both on and off the road.

I have inverted Disco rims with both 33" BFG MTs and 35" Simes JTs under my Rangie - and both will be used under my Defender, when its finally finished!!!

The extra track is good for more than just rubbing on steering arms, from a speed point of view the vehicle will turn into corners much tighter than standard depending on the size of offset and will handle a little better. However if you have an alignment problem of any sort the vehicle will tend to bump steer to a small degree. this is not a bad thing you will know if you have an alignment issue. And is little harder on stub axles and bearings.

Series vehicles with 32p 16 x10 offset steer like they are on rails.

Advantages as others have listed, mainly together with oversize tyres.
Offset wheels put more strain on both stub axles and bearings (which are reasonably over engineered in the vehicles you are talking about) and on the steering components, particularly the track rod. Without power steering the steering can become much heavier, but I assume you have power steering.

The biggest downside is that in most states (not sure about Vic, but I think this applies there) they have become much stricter on this sort of modification in the last year or two, limiting it to very modest increases both in tyre size and track increase. It would be wise to check the legal situation before spending any money.

Solid axle track increase is a total of 50mm over std to remain legal.

I'm running 78mm over std with no issues aside from some son to be resolved rubbing in the wheel arch at full flex.
