grunt down low is astonishing but i am rather intrigued as to how it will handle the climb up the di'agular range or the climb to the bellthorpe road to the top of the range but need to get clutch with some grippy before i take them on

Try a 1.222:1 TF case from a Disco, I guess from what you have mentioned it has a 1.003:1 high range, which is apparently factory ratios for these. However, My uncles one had 1.222:1 from new, and running 750/16 it was fine in 5th.
I was going to mention turning up the fuel screw a little more, but your comment about the clutch has merit. It WILL slip unless a heavier pressure plate is used, especially in 5th
