The digital thermometer will most likely use a thermocouple so extending the wire will cause additional junctions and unless done via proper thermocouple extension/plug it would throw the reading out as additional voltage differences will occur.

Given the accuracy of many small thermometers it won't make much difference. Last indoor/outdoor one I had would show 1.6 deg difference when the probes were next to each other.:(
