Simon nailed it. If you want to know what an EU30is will sound like when running an aircon .... take a fan heater (2000w-2400w) with you and demo one running said fan heater ....
Like I said .... EU30is or EU30iu (but there's not much $$$ difference and I'd pay the extra $$$ for the "is" .... 'cause it "is" better .... :p ... and you will have capacity left over to run the "ping" machines and other stuff :)
That fuji chiller is 5.2kw cooling capacity ... how freaking big is the van again  ???? (Block of flats ?) The outlaws have a 5.2kw Panasonic inverter and it comfotably does an open plan kitchen, lounge & dining area .... and sometimes a small bedroom .... maybe 45-50sqm.
Isn't there space on the wall in the van for a std wall mounted inverter type unit ? The roof mount's a good idea though! I'm told it's critical to match an inverter a/c unit to the size area to be cooled ... too big and it doesn't work properly ... too small is too small.

The 'net formula I found for aircon size said W X L X 173 plus 2000 if a kitchen is involved--
