i would consider a permanent 'carputer' using something like a tiny rasberry pi and run software like centrafuse which essentially gives you touch interface for gps, usb cameras, mp3, video, odb, etc etc etc.... you can customise the set up till your hearts content.
All your attached devices could run of a powered USB hub. Cameras, adruino , 3g modem, screen etc.

I currently have a flip up mimo on the dash and a small netbook laptop that I attach to a USB and power port in my cubby box.. this then boots into centrafuse and attaches to all the usb devices in the car - switching screen and control to dash.
Best bit is on travels I can take the laptop out and use it away from the car on windows 7 (dual boot). Wost bit is the hassle attaching it in a busy cubby box, turning it off and on, waiting for it to boot... so I'll probably switch to a permanently installed rasberry pi style computer in future.
