I only bought mine at the recent SuperShow but I did a mild Vindaloo Chicken the other night that wasn't too bad.

Put the oven onto some hot coals and get it nice an hot, then add
enough vegetable oil to cover the bottom of the oven,
2 roughly chopped onlins,
2 cloves of garlic, sliced or smashed,
1" of green ginger root, sliced or shaved,
a good tablespoon of Vindaloo paste (more would be nice, but the kids needed to eat).

Give it a good stir until the onion starts to go clear or brown, then toss in about 1/2 kg of cubed chicken breast, make them big cubes and stir constantly till the chicken is well coated with the sautee mix.

Remove the oven from the hot coals and bring the heat down a bit before adding a tin of coconut milk/cream and putting the lid on with some coals on top.

Put a pot of water on the hot area of coals to boil for the rice at this time.

Peel some potatoes and/or sweet potato and cube to about 1cm cubes and then add them to the curry.

Add the rice to the boiling water.

Check the curry and if it is starting to dry out too much, add another tin of coconut milk or some water and a handful of raisins or sultanas.

Drain the rice and serve.

Kev .
Yeah keep them coming people, soon as I get time I will set up a fixed area for all this lot.
There are two types of people in this world, good and bad. The good sleep better, but the bad seem to enjoy the waking hours

Ever tried US hard tack? They get issued rat's that consume more water per person in one meal than a 9 man section from the RAR use in one day! The amount of sugar issued would send a bull elephant's pancreas into spasm and see him a in a diabetic coma within 3 days...they are the only Military I know who can put on weight when on ops in the tropics. :?

When patrolling, bigpacks are the order of battle for Aussies, Kiwis and Poms. The seppos will have their packs choppered out in the morning and choppered in to their night LOC along with their fresh icecream. Why put them on hard tack in the first place????? :x

Don't get me started on Seppo soldiers.

I met a US Navy fella with a chest full of medals. They were for 'time at sea' and such other trivail stuff which IMHO is just part and parcel of the job. I may have said this before (probably have in fact) but it must really **** of those veterans with a few combat medals....

Sorry to get off-topic so far, but I'm hungry...
