    Barrawhacker Camp Oven Fish Bake

    The original recipe I stole - but it has evolved to the following.

    Large Camp Oven - I use a Bedourie
    Spuds
    Onions
    Jalapenos
    Four thick fish fillets - (skinned) obviously barra is great
    Couple smalls cans (the real little fellas) of diced capsicums
    Couple small cans corn kernels
    Block of very/extra tasty cheese - cubed
    Salt/pepper
    Cinnamon
    Honey
    Fish seasoning - GardenFresh brand is terrific
    Olive Oil

    Skin and bring spuds to boil - do not cook
    Splash of oil in camp oven
    Slice spuds (fairly thick) - line bottom of camp oven with these slices
    Slice onions - thin layer over spuds
    Jalapenos - about a dessertspoon over this mixture
    Place fish fillets onto this layer
    Season with salt/pepper
    Pour a bit of honey around the fish - not on it (probably about two tablespoons) - if you have had a beer or two just whack it in
    Drain the corn kernels and capsicums
    Spread the corn and capsicum over the fish
    Chuck the cheese over this
    Sprinkle with the cinnamon (about a teaspoon)
    Sprinkle a heap of the GardenFresh Fish Seasoning over this (heaps - this stuff is great)
    Bake it in the coals - you know what to do - if it is in for longer than 30 minutes you will burn it -

    Use an egg slice to lift the fillets out - spoon some of the "mixture" over the fish
    Delightful and different - and easy

    You know, I read this today at work.... right about lunch time. My god ! wasn't I hungry for some fish. It sounds great
