Hee hee, that's some project. But you'll love it when you're done, and it's all done the way you want it.
For the handbrake, you may be able to use a later handle and cable, which should be easier than trying to get the earlier mechanical assembly to fit.
Ashcroft Transmissions may be worth asking for kickdown specs. I think you only need to move one lever a certain amount. And a workshop manual should have information on adjusting it, which may help. I know on my 727 I had to fix all that up when I first got it, (which is one reason I'm changing it to a manual!) I'm not familiar enough with the EFI and ZF systems, but since it uses a throttle cable there should be something there you can use as reference.
And you should be able to use a ZF shifter since, at least, it should work!
