If its had regular maintenance then 350k is fine, i've done 320k in mine and it feels as tight as the day i bought it at 188k.
As the title suggests, would I be opening a big can if worms to get a motor with this many kms? What should I look for?
Apart from the alternator all my defender had by 300k was new injectors, rear main seal & T seal (plus timing belt twice of course)

Check for excessive crankcase blow by, a good test would be to unscrew the oil cap while idling and if the pressure pushes the cap up and down than consider the worst, it maybe something simple but it can indicate cylinder damage or wear. Servicing is important I have a 300tdi traveled 320000km which I'm stripping. Due to a blown head gasket but as I was pulling it apart discovered excessive corrosion in cooling system, all cylinders have suffered excessive wear to cyl bore and rings, main and bigend bearings worn to the brass, the gearbox had been fitted with some of the bell housing bolts missing causing cracks in bell housing and engine adapter. In other words no love has been given to this engine, we all need love. I have another 300tdi which is brilliant! Also if you can have the engine stone cold on your arrival, when you start it don't give time for the glow plugs to operate just turn it over observe the time it takes to fire and start. Also white smoke from exhaust at this time. A puff of black or gray smoke is normal. A healthy diesel of this design should fire quickly and easily in our climate. Another indicator of strong compression and a strong battery and starter.
